October Meeting

Easy Noodle Casserole

1 lb. ground turkey or beef
1 cup chopped onion
2 cloves garlic, minced
3 1/2 cups crushed tomatoes in puree (28 oz. can)
1 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 cups noodles or macaroni - cooked and drained
1 cup shredded cheddar cheese, divided


In large skillet, brown beef with onion and garlic. Drain well. Mix in tomatoes, oregano, salt, and pepper. Simmer about 10 minutes, stirring occasionally. Mix in zucchini; cook for additional 10 minutes. Blend noodles. In 12X7 inch baking dish layer half of meat mixture and half of cheese. Repeat layers. Bake in preheated, 350 degree F oven, oven for 15-20 minutes or until heated through.



Barb-B-Que Pork

Cook pork anyway you like until tender.
Pull pork apart with two forks.
Pour sauce over and warm until taste is in the meat - about 2 hrs.

Sauce

1 cup catsup
1 Tbs. spicy brown mustard
1/4 tsp. pepper ground
1 tsp. coriander ground
1/2 tsp. cumin
1/8 tsp. red pepper
1 Tbs. paprika
1/4 tsp. thyme
1/4 tsp. basil
1 Tbs. garlic
1 1/2 tsp curry powder
1 Tbs. honey
1 Tbs. soy sauce or worcestershire sauce



Homemade Applesauce

Adapted from Sarah's Applesauce

8 Empire apples (or apple of choice)
1 1/2 cups apple juice or cider
1 tsp. cinnamon

Peel, core, and cut apples into chunks. Add juice and cinnamon. Bring to a boil, then reduce to medium heat and simmer until apples begin to break apart when stirred. Use a potato masher to mash apples, but make sure to leave some chunks. Serve on pancakes as an alternative to syrup, or enjoy by itself.



These next recipes are some of my family's favorites. I shared them in a cooking class in January, but I thought I would add them here too.


Zesty Bean Burgers

Instead of frying these burgers. I make them into patties and place them on a greased cookie sheet. Bake at 350 F for about 20 min. or until brown.


Twisted Pair Pasta Salad

I leave the artichoke hearts out since they are so expensive, and the salad still tastes great! You can also use a different pasta if the Twisted Pair is not to your liking. I often use gemelli pasta instead.
